Challenge

Following the refurbishment of the Mercure Brisbane rooms and lobby, WMK was engaged to refurbish the restaurant and incorporate the new brand standard.

The brief was to create a space that encouraged guests to dine at the restaurant for both breakfast and dinner by allowing the buffet to be transformed by night, all within a limited budget.

The design needed to reflect the change in menu, towards portionsized servings offered at the buffet breakfast, to modern tapas by night, whilst demonstrating the restaurant’s use of local produce.

Solution

WMK created grab-and-go chillers and buffet niches to accommodate portion-sized food and prevent queuing.

The niches transform into display cases by night, or can be hidden through strategically-placed blinds, while hot servery becomes part of a theatre kitchen.

Catering for the Mercure’s target market of single business travellers, the WMK team created powered communal tables, allowing individuals to plug in devices whilst dining. In addition, a variety of seating was included, allowing the space to be transformed for various functions and uses.

Outcome

The outcome is a bar and restaurant space that is suitable for a multitude of uses and functions – not just breakfast, lunch and dinner – including as a space for guests to lounge throughout the day.

The refreshed space has resulted in more guests choosing to remain within the hotel to dine in the restaurant.
